Egg less Orange Cake / Bread/ಕಿತ್ತಳೆ ಹಣ್ಣಿನ ಕೇಕ್

Hellooooo, I am back after a very long time, hope I will be on track here after!!!
Lock down, lock down and lock down everywhere!!!. Yes this is one of the lock down recipes which I made with my two little daughters!!. They love to have cook something special everyday. I m pretty sure you are all busy with trying new recipes. Here is my version. This is the first time I used whole wheat flour instead of all purpose flour. I just loved the texture and taste. Give it a try. Say bye bye to all purpose flour. Eat healthy, stay healthy. You can call it either Orange cake or Bread. Give it a try, let me know how you liked it.


Preparation time: 15 min plus baking time
Servings: 4

Ingredients: 
  • 2 cups of Whole wheat flour/ Godi hittu 
  • 5 medium size peeled and deseeded oranges
  • 1 tsp Orange zest
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 3/4 cup brown sugar/ sugar( I used brown sugar)
  • 1/2 cup cooking oil
  • 1 cup warm Milk
  • Pinch of Salt

Method:
  • Pre-heat the oven at 350F for 15 min.
  • Blend Oranges, Suger, Oil in a blender for 1 min.
  • Sieve the wheat flour, baking soda and baking powder and pinch of salt together in a bowl. 
  • Mix the sieved flour  and Orange blend. Add the warm milk and Orange zest, mix well. Make sure no lumps.
  • Line a baking pan or oven friendly bowl with parchment paper. Pour the batter. 
  • Preheat the oven at 350F for 15 min. Keep the  pan in  middle of the upper rack. 
  • Bake for 50 min at 350F. Insert a knife or fork through to check if its evenly baked. If the batter still sticks to the knife, bake again for 3-4 mins. 
  • Allow to cool completely
  • Serve (with a scoop of vanilla ice cream for kids).

Coconut-Poppy Seed Bread (Eggless)

Hello friends, here is a different, easy and tasty bread recipe for you all. I took the basic idea of this recipe from a cook book, but not followed the step to step procedure as in the book. I did some changes in the ingredients. I skipped adding Soy Milk ( was in the original recipe), I somehow don't like the flavor. You can substitute the regular Milk with Soy Milk and some other flavors if you like. Give it a try. Have fun.

Preparation time:2 hr 20 min.
Servings: 1 Loaf




Ingredients:

  • 1 1/2 cup All purpose flour
  • 3/4 cup sugar
  • 1/2 cup freshly grated Coconut
  • 2 tbsp Poppy seeds / Gasagase
  • 2 tbsp Butter(melted)
  • 1 1/2 cup Milk
  • Crushed Cardamom 
  • 3/4 tsp baking powder
  • 1/4 tsp baking Soda
  • Pinch of salt


Method:
  • Soak the Poppy seeds for 1 hr.
  • Then grind the soaked Poppy seeds with Coconut and about 3/4 cup Milk into smooth paste.
  • Take Sugar and Butter in a bowl and mix well. Then add All purpose flour, Baking powder, baking soda, ground mixture, crushed Cardamom and salt to taste, mix very well.
  • Now add the remaining Milk and mix well.
  • Now grease the loaf pan with little Oil or Butter, pour the mixture.
  • In the mean while pre- heat the oven at 350 degree F for 15 min.
  • Now place the loaf pan in center of the oven and bake for 55-60 min.
  • After 55-60 min, insert a knife or fork through to check if the bread is evenly baked. If the dough sticks to the knife, bake again for 3-4 min.
  • Allow to cool for 10 min.
  • Serve with a cup of hot Tea or Coffee.

Eggless Black Berry Muffin

Ahh!! I finally learnt to make Muffins. I never knew making Muffins is so easy. I tried several times before but used to end up batter sticking to the cups. I think I used  more Milk before. But today, I used less milk and made the batter thicker ( slightly thinner than Chapathi dough). You can use Eggs if you are fine with that but never ever make the batter watery.  Give it a try. Enjoy.

Ingredients:
  • 1 cup All purpose flour ( used 225 ml cup)
  • 1/4 cup Sugar
  • 1/4 cup cooking Oil
  • 1 tbsp melted Butter
  • 1 tsp Baking powder
  • 1/4 cup Milk
  • 1 tbsp Vanilla extract
  • pinch of salt
  • 10-12 Black Berries
Other requirements:
Muffin Tray and paper Muffin cups


Method:
  • Take Milk and Sugar in a Bowl, mix well.
  • Add the remaining ingredients except Back Berries to the Milk-Sugar mixture.Mix very well and keep it aside for 5-10 min.
  • Now add Black Berries and mix.
  • In the mean while pre-heat the Oven at 400 F for 15 min.
  • Place paper Muffin cups in the Muffin tray and pour the batter( 3/4th of a cup, needs space to puff out).
  • Bake at 400 F for 25 min.( look for colour change).
  • Serve with a cup of Coffee or Tea.

Note: We can make 6 muffins out of 1 cup flour.

Banana-Raisin Bread


This is one of the easiest baking recipes.I learnt this recipe from Sharada Bhat.You can add Egg if you are fine with the Egg. I substituted Egg with Milk.Try it out,you will definitely like it.Enjoy...

Ingredients:
  • 1 and a half cups of All purpose flour/Maida
  • 3 fully ripe Banana mashed
  • Hand full of Raisins( or as much as you like)
  • 1/4 th cup Sugar
  • 1 tsp cooking Soda
  • 1 tsp baking powder
  • 4 tsp melted Butter
  • 1/4 cup Milk
  • Pinch of salt.

Method:
  • Take all the ingredients except mashed Banana and Milk in a large bowl and mix well.
  • Then add mashed Banana and Milk then mix well again.
  • Pour batter in a bread pan or any baking pan which has little depth.
  • Then bake at 350 degree C for 30-35 min in a pre-heated Oven.(at 350 degree C for 15 min)
  • Take out the pan after 30-35 min and insert a knife or fork through to check if evenly baked.If the dough sticks to the knife, bake again for 3-4 mins.
  • Do not over bake else end up uneatable.

Veggie Burger


Ingredients:
  • Small can of Chick Peas ( Kabul Chana, plz see the note)
  • 2 Green Chillies minced
  • 1/2 tsp Red chilli powder
  • 1 medium Potato cooked and mashed.
  • 2 tsp All purpose flour/Maida for binding
  • 2-3 cloves of Garlic minced
  • 2 tsp Oil
  • Salt to taste
  • Burger Buns
  • Cheese
  • Leaf Lettuce
  • Cucumber sliced
  • Tomato sliced
  • 1 slice of Cheddar cheese 

Method:

Patties

  • Coarse grind the Chick Peas in a food processor or blender.
  • Mix coarse ground Chick peas with the minced Green chillies,Garlic,mashed Potatoes,Red Chilli powder,All purpose flour and salt.
  • Make medium sized balls out of the above mixture and pat into 3-4 inch(in diameter) patties.
  • Heat a pan with lilttle oil and cook the patties for 6-7 min each side on a medium heat.( till the colour changes to golden brown).
Burger
  • Cut open a Burger Bun. Put the leaf Lettuce, Cheese, Patty, Cucumber and Tomato slices on one half and cover with other half and serve.

Note: If you are using dry Kalbuli chana, soak the chana for overnight and pressure cook ( 3-4 whistles).
If you want to know the Bun recipe Click here.I used the bun which I made at home,used more Lettuce and skipped Cheese. You can make as per your taste.We can make 4-5 medium size Patties from a small can of Chick peas.

Eggless Bun





Ingredients:
  • 4 cups of Maida / All purpose flour
  • 2 tsp Sugar
  • 2 tsp dry Yeast
  • 2 cups warm Milk
  • 5-6 tsp melted Butter
  • salt to taste

Method:

  • Mix 2 cups of warm Milk, Sugar and dry Yeast well and keep it aside for 10 min or keep it till Yeast gets completely dissolved.
  • Then mix all purpose flour, 4 tsp of melted Butter, salt in a big vessel then pour Milk and Yeast mixture, mix it well, make a smooth dough and knead it for 10 mins.
  • Cover the dough with a wet muslin cloth or towel, keep aside for 1 hour for proper fermentation. Dough will be doubled in size after 1 hour.
  • After 1 hour take off the cloth and gently press the dough once.
  • Then cover the dough with wet cloth again and keep it aside for 10 more mins.
  • Cut the dough into the size you want make the bun and shape it round or you can make any fancy shape if you like.
  • Grease the baking tray with melted Butter and keep all shaped dough in the pan. Cover the pan with wet cloth and keep it aside for 30 min.
  • Spread the melted butter on top of the dough.
  • Then keep the pan in centre of the oven and bake it at 425 degree F for 30 mins.


Note: If you would like to add Seasame seeds add before keep it for baking and you can use dry flour to give shapes if the dough is very sticky.
